In the context of land-based gambling, coloring up or coloring out means exchanging low-denomination chips for higher denomination chips. Usually, this is done so that the player does not need to carry too many chips with them after they get paid for winning a big bet.
To color up, all you have to do is tell the dealer: “Color out, please.”
